Soppgleder is a small, one-mans business in Østmarka area, run by Morten Jødal. Morten is a biologist who has been working with controlling picked mushrooms for poisonous ones since 1980, and has been the leader of the mushroom group in Asker and Bærum for many years. In 2003, he got tired of his office job and started the sole trader "Soppgleder". Morten spends autumn out in the woods, gathering mushrooms to make quite special products that he sells mainly through two channels: Bondens Marked and Bondens Butikk in Mathallen (a hall filled with food shops and restaurants in Oslo).
In Bua we sell Morten's mushroom "soy" sauce, Gledesdråper. It has a taste that we think resembles soy sauce, but that is much more rich and complex. Morten makes this sauce by salting chantarells and hedgehog mushrooms to extract their water, which carries a lot of flavours. Then he boils the extract together with burnt sugar, red wine, ginger, lemongrass, herring and chili. He takes care not to boil it for too long, so that it does not become too salty.

Apart from mushroom soy sauce, Morten also sells different sorts of dried mushrooms, and makes kantamell - caramels with chanterelles.
In addition to working with mushrooms, Morten also works as a historical guide along the river Akerselva that runs through Oslo, and is involved in various projects.
The mushrooms that Morten use are mostly what he picks himself, around in the area where he lives in the forest in Bærum. But sometimes he also buys some mushrooms that other people have picked.
The ingredients in the Gledesdråper are not organic, but we like the initiative of Soppgleder. We carry it in Bua because we think it is a unique and wonderfully tasting product, and because we like products that promote the use of nature's bounty.
